This is one of my favourite quick and easy dishes from Greece that is super healthy and cheap to make. I usually have all the ingredients in the house so it’s very convenient when I haven’t been on my weekly food shopping yet and I need to make a quick but hearty meal after work.
Ingredients
1 small onion
1 tbsp vegetable oil
300-500gr spinach (I used frozen)
½ can of chopped tomatoes or tomato puree
½ vegetable stock cube
2 tbsp lemon juice
1 cup rice (I used basmati)
Water (as needed)
Instructions
1. Place the chopped onion with the oil in a large pot and saute until transparent and add spinach. Stir for a couple minutes.
2. Add tomatoes, 2 cups water, stock cube, lemon and rice (keep adding water as needed). Cook for 20-30 minutes until rice is soft.
3. Optional: serve with feta cheese
